I’m a huge fan of quick, healthy snacks. And fresh bruschetta pretty much tops my list of favourite appetizers.
I threw together the snack above in under five minutes. On a sliced baguette, I added a mixture of chopped cherry tomatoes, fresh basil, a dab of olive oil, salt, and pepper; topped to perfection with a little shredded mozzarella. I toasted it in the oven for a couple minutes and done.
What a nice pick-me-up after a day at the office!
